Pasta with Gorgonzola and Spring Onion (serves 2-3)

This recipe uses creamy gorgonzola. Use about half as much if you have piccante gorgonzola.

  1. Fry the onions in the butter over a medium heat until they are soft (about 5 minutes).
  2. Add the flour one tablespoon at a time and stir over a low heat. The mixture should form a thick dough.
  3. Add the milk a bit at a time. Stir slowly over a low heat each time.
  4. Add the cheese and stir over a low heat until there are no large lumps.
  5. Stir in the salt and mustard powder.
  6. Mix the sauce with cooked drained pasta and serve with the pepper ground on top.
