Pasta with Gorgonzola and Spring Onion (serves 2-3)
This recipe uses creamy gorgonzola. Use about half as much if you have piccante gorgonzola.
Ingredients:
- 50g butter
- 200g finely chopped spring onions
- 2 heaped tablespoons plain flour
- 250ml milk
- 150g gorgonzola cheese cut into small pieces
- Half teaspoon salt
- Half teaspoon mustard powder
- A little freshly ground black pepper
Method:
- Fry the onions in the butter over a medium heat until they are soft (about 5 minutes).
- Add the flour one tablespoon at a time and stir over a low heat. The mixture should form a thick dough.
- Add the milk a bit at a time. Stir slowly over a low heat each time.
- Add the cheese and stir over a low heat until there are no large lumps.
- Stir in the salt and mustard powder.
- Mix the sauce with cooked drained pasta and serve with the pepper ground on top.
