Spinach Omelette Sauce (Serves 1-2)
This makes a good topping for baked potatoes.
Ingredients
- 1 bag young leaf spinach
- 4 eggs
- 3 tbsp very low fat fromage frais
- 2 pinches oregano
- 1 pinch nutmeg
- 10ml boiling water
- Salt
- Pepper
Method
- Put the water and spinach in a large saucepan and stir gently over a medium heat until the spinach is cooked.
- Stir in the oregano, nutmeg, salt and pepper.
- Add the contents of the eggs and stir to break the yolks and to stop them from burning.
- When the eggs are cooked stir in the fromage frais.
