Spinach Omelette Sauce (Serves 1-2)

This makes a good topping for baked potatoes.

Method

  1. Put the water and spinach in a large saucepan and stir gently over a medium heat until the spinach is cooked.
  2. Stir in the oregano, nutmeg, salt and pepper.
  3. Add the contents of the eggs and stir to break the yolks and to stop them from burning.
  4. When the eggs are cooked stir in the fromage frais.
